Gold Leaf Part2 ・ 金箔押しその2&シュトレンアップしました

This morning, I blogged about how I am into 24K gold leaf and my way of pass-time is to visit temples and shrines admiring its beauty and techniques. (Blog on Golld Leaf Part 1)

It was through the work-shop held by Master Fujisawa, the gold-leaf artisan, whom I have met for the first time. I could actually experienced the gold leaf decoration technique, turning plastic earnings into gold ones !

24K gold leaf is covering earnings. We then polish. 
These are the only two shots from the entire process but many others process are in between. A full day of work shop was just enough to savoir the taste and it was more than enough for me. (sweating !)

After the work-shop, we discussed about how the artisan social circle shifted. Until very recently, they didn't come to the front line. They always had a someone contacted clients on behalf. And clients are only those relating with Temples and shrines. So if it were 50 years ago, having a work-shop or decorating accessories were no go !

But the time is shifted and now artisans are in liberal environment. Like Master Fujisawa, who established his career as gold-leaf artisans, he is willing to apply his skills on new area. He mentioned his area of business are expanding to arts and home interiors. "Is there anything you can't apply gold-leaf ? Any kind of materials ?"  I asked by curiosity. "Anything solid, I can do. Like woods, plastic, iron etc. Soft material like tissue, paper are different techniques so I don't do them."
That means we can apply gold-leaf pretty much everything !

今朝のブログの続き、『金箔押し その2』 です。箔押し師、藤澤典史さんの紹介文になっています。

そうそう、最近英語でブログを書き始めたので、『ブログを読みながら、英語の勉強させます~』 って学生のお子さんのお持ちの友人からコメントもらいましたが、、、これ、多分、私のブログを娘さんに読ませてるって事だと思うけど、大丈夫かな。全く対訳になっていないので、そのあたりお気をつけ下さいね。(笑)

シュトレン販売開始です!

空欄になっていた、シュトレンの写真、お値段、大きさなどの情報をHPに更新しました。


ドライフルーツが小麦より多い配合になっているので、プライスもそれなりにするとは予想していましたが、、、大台乗ってしまいました。まさかの1万円越え。(汗)

試作を繰り返している課程で、ドライフルーツは有機でなくてもいいかな、とも思ったのですが、食べ比べると違いがわかっちゃうのですよ。バターもね。たくさん使うから、あすなろさんじゃないバターでトライして浮気しかけたのですが、たくさん使うからこそ、違いがわかるんですね。ちょっと迷ったけど、世の中に、一件ぐらい有機フルーツや白い砂糖不使用で作ったシュトレンを売る店があってもいいのかな、と思いなおしました。なので、カノエのコンセプトにのっとり、シュトレンも例外なく有機材料メインです。白いお砂糖も不使用。

ただ、通常、シュトレンが長持ちするのは、周りをバターとお砂糖でコーティングしているからなので、砂糖なし、という訳にはいきません。たくさん使っても、えぐくならない砂糖といえば、個人的にはメープルシュガーが一番美味しいと思っています。メープルシロップを専門に扱う業者さんの中に、奇跡的に粒の細かいメープルシュガーが見つかって、きちんとコーティングできました。商品化できてほっとしています。暖房のかかっていない涼しいお部屋で保存いただければ、2週間はゆうに持ちます。(我が家は木造建築。暖房をほぼかけない北向きのお部屋で保存して、一ヶ月は大丈夫です。でも消費期限のオフィシャルな記載は2週間とさせて頂きますね。)

Gold Leaf Part1 ・ クリスマスなので(?)金箔押し&シュトレン

Glittering season has come!

Christians aren't the most major population in Japanese but we are accustomed to see Christmas decorations this time of year. OK, it is more of commercial reasons but hey, it doesn't matter. It is festive. It is gorgeous.  I love it !

Now it got me thinking.... Do we have anything like this shinning decoration in Japan ?

When I was in Lyon, one of the memorable pictures are like this. ↓ It was my first trip to Europe.

Everywhere I looked the scenery was pictorial and the monuments are classy but I do remember this vividly.

The ceiling was shinning gold and I was wondering how many semesters would be paid off if I could scrape a bit of gold from ceiling ! (Yes, I was a young student living off student load.)

In Japan, we have shrines and temples.  We use a gold leaf to decorate.
So light that we need to hold breath !
A paper thin square gold (as tiny as 11cm x 11cm) is used to cover wood architectural temples, shrines and castles. With a skilled touch of fine artisans, woods architects are turned into shining gold.

We have gold decorations all year around, as festive as Christmas ones !

Why am I so hooked into Gold Leaf ? Well, with a bit of luck, I recently came to know one of the top artisan personally. How I got to know him? I will continue on the next blog.

Today, we finally started on December... The count down has started as well. We shall fully enjoy the last month of 2016. 

今日から12月! ことしも残すところ一ヶ月ですね。クリスマスのデコレーション、イルミネーションで華やいだ大好きな季節。でも、日本には負けず劣らず、美しい飾りがあるではないか、しかも通年、と最近になって再認識する出来事がありました。

そう、寺社仏閣に施された金の箔。 カトリックのきらびやかな教会とはまた違った美しさ。日本人のテイストというのか、日本流の “きらびやかさ” の加減なのでしょうか。

私の金箔マイブームには理由があって、、、。ちょっとしたご縁で、本物の箔押し職人さんと知り合うきっかけがありました。(本物、、、っていうのも変な表現だけど。有名どころの寺社仏閣は、ほとんど手掛けらている、一流の職人さん、と言う意味です。 )

その職人さんの元で箔押しの体験をさせていただき、そこからのご縁で、個人的に箔押しをお願いしたりなどの経緯があって、とても素敵な経験をさせて頂きました。だから、もっとたくさんの人に金箔押しの美しさ、素晴らしさを知って欲しいと願っています。 

と、長々綴ってしまいましたが、『他に語るあるだろっっ』、とシュトレンを予約してくれた旧友からメッセきそう。(オロオロ)

シュトレンの準備・Stollen is Coming 2 - Work in Progress

シュトレンの写真撮影を先週終え、本日、データーがあがってきました。

I just received a data of photo shooting. 
Here are some shots on stollen and gift packaging.

Regarding the box, the fabric and the braided rope (in silk)  are both from Kyoto. Kyoto craft-men and I  are teamed up to provide the best stollen for our customers.

このえ塾生参集・Konoe sansei in Town!

パンの師匠、このえ先生が岩国から上京されています。この週末にお会いしてきました。一年ぶりの再会!

それまでは毎月、ご自宅のパン教室でご指導を受けていて、、、。

月日が経ち、お互いの住む場所や、職場の環境が変わり、それとともにお会いする頻度も変わりますが、いつもお会いしても楽しい再会なのです❤

今回は、先生の出張先の近所の聘珍楼にて、薬膳メニューを囲んでの“このえ塾生会”。


左、Tommyさんは、伊東のDer Marのオーナーさん。Der Mar はオープンから10年の(!!) パン屋&雑貨屋さん。
右、私、オープン間もないパン工房の駆け出しオーナーは栃木から。
そして先生は山口から、、、吉祥寺に集合。

3人のマイレージが半端ない (笑)
そして、先生の求心力、すごくない? 伊東このえ先生栃木

それぞれ、先生には大変お世話になった事情があるわけで、
お会いできるなら飛んできちゃうっ。

きっとこれから、何年経っても、何十年たっても、先生の人間力に引き寄せられるのだと思います。


先生から頂いた岩国のお土産は“がんね栗”のパウンドケーキ。
岩国でとれる栗らしいのですが、とても大きい!
栗の実1個30g、卵半分ぐらいの大きさで、和栗では最大級だそう。

ほくほくです。

うまし。。。

先生っ、パン談義もいいけど、、、次は栗拾いに行ってもいいですか~? 


It has been a year since our bakery master Konoe-sensei relocated to Iwaguni, southern part of Japan. (Next to Hiroshima-prefecture, about 8 hours away from Tokyo via train.)

Before her relocation, we used to meet her every month for her hands on baking class held at her house.
Now we miss her so much and we were looking forward this occasion!
Once a year this time of the season, she comes back to Tokyo.

Now we are ready to catch up.

Middle of the photo is Konoe-sensei. Me on the right and Tommy on the left. The time and place are different but we both learned a lot from her so it is like a school reunion.

My shop opened recently and I do remember vividly her support and advice provided in various occasion. Tommy, on the other hand, has been running his bakery shop for 10 years now but I guess the gratitude towards her hasn't fade away.

Isn't it amazing ? It shows how wonderful personality she has and many pupils like us are attracted.  
No wonder, every time we meet, the time is never enough for chatting and laughing.

When the party is over, she gave us a souvenir from Iwaguni. It is a pound cake with huge chestnuts. One chestnut is 30g. A half size of one egg !

YUMMY ♪♪

Apparently this chestnuts is famous for Iwaguni region where now she manage the local bakery shop. The humongous chestnut is called Gan_ne_guri.  This is her 2nd Autumn since she moved and it is already her ritual to go chestnuts picking on week-ends.

Now... I really have to see her again.

Yes, I learn a lot about bakery when I am with her.
But this time I will have to ask her to take me for Chestnuts picking !

12月の製造・発送日アップしました~シュトレンの季節 Stollen is Coming !

ハロウィンが終わったとたんに街は一斉にクリスマス。毎年のことながら早変わりにびっくりします。

飾り付けとか大変だろうなぁ~、と。

ただ、今年は他人ごとではありません。カノエのパン工房のクリスマス限定メニューStollenの販売を開始します。ただいま、準備の最中。

Stollen Carré Petit

これはStollen Carré Petit. 小さいサイズ。

来週プロの方に残りの写真撮影を依頼しているので、11月中にはHPで詳細アップできる予定です。直前の告知になりそうです。10月から着手しても良かったかも。(苦笑)

Stollenももちろん例外なく、白砂糖未使用です。代わりにメープルシロップで仕上げた世界初(?)のStollenかも! 白砂糖Free, 罪悪感Freeで楽しいクリスマスを迎えられますように♪

12月も水~土 が製造・発送日です。お休みは12月25日~1月5日まで。1月6日(金)から製造・発送開始です。




Here comes. As soon as Halloween ends, the Christmas mode is on.
I used to ignore that because it felt too soon as if we were speeding up to finish the year.
However, not this year. I am deeply in Christmas mode as my bakery starts to selling Stollen from December. I am in the middle of the preparation.

I have arranged photo shoots by a professional next week. Once photos are ready, hopefully by the end of this month, I will post more information.  I felt I should have started preparation earlier !

Stollen is no exception: no white sugar. In stead maple sugar is used.
Evey single crumble is yummy and healthy!

ギフトパッケージ ・ Gift Packaging Coming Soon

HPの最後のセクションの作製に取り掛かっています。

ちょっとだけイメージ
 

こんな感じでギフトパッケージのボタンが増える予定です。

クリスマスのシュトレンを始め、甘酒リュスティック(夏期限定・来年の新メニュー)、リュスティック、くるみパン、くるみレーズンパンなど、パウンド型 Mサイズ Sサイズのパンに対応します。

肝心のギフトパッケージの写真がないのは、、、今回は自分で撮影はせず、プロの方に頼む事にしました。 テキスタイルの光沢や、シルクの質感、シュトレンの背景を飾ってくれる豪華な装飾品、京都の職人技を集めて作製しているので、素人写真では申し訳ないですから。出来上がりが楽しみ❤ ちょうどシュトレンのクリスマスの時期にローンチできそうです。が、クリスマスだけでなく、カノエのパンがいろんなシーンで選んでいただけますように。四季を通して、さまざまな気持ちを運べますように、と願っています。^^







The new section of my HP is under the preparation: Gift Packaging. I can't much reveal right now as I do not have proper photos. This time I have asked a professional photographer to shoot. I have tried taken some but it didn't come out well. I didn't want my armature skill spoil the the packaging which made by top Kyoto artists.  It will probably be released by early December. It sounds so cliche to launch just before Christmas but really, I didn't aim it. My bread make a good gift any season ! Not only for Christmas, but also Wedding, Baby birth, Grandmother's birthday... I am ready for any happy occasion.

The above chart is to show the size of bread. M and S size are fitted in this gift boxes.

I am looking forward the outcome of photo shooting !

マホガニーの箱 / A Box Made of Mahogany

箱を作ってもらいました。筆箱の3倍ぐらいの長さの箱です。


何がはいっているのか?

刃渡り20cm程の包丁。クロワッサンの生地を切るのに重宝していますが、もともとは岩国寿司を切る包丁。(詳しくはブログ 岩国のお土産

近所の木工工房、木の子さん でつくってもらったの。 家具を作った際の端材がたまたまマホガニー。高級木材の箱で包丁入れができちゃいました。ラッキー!中はウォールナットのアクセントで包丁を固定。これでむき出しで物騒な包丁が箱に収まりました。


さて、そもそもですが、、、本当は鞘とセットで購入したかったのだけど、最近鞘を作る職人さんが減っていて、包丁より高いそうです。  … でも 日本→刀→鞘… え゛~、サムライの国なのに。。なんで ?!

刀職人や鞘師に限らず、、、職人さんの数って減ってますよね。う~ん、日本よ、このままでいいno
だろうか?

今後のブログで詳しくご紹介しますが、ギフトパックを準備している課程で京都の職人さんたちと繋がりました。(シュトレンのラッピング、カノエオリジナルです♪)
カノエと同世代の職人さんたちですが、作品はこの世のものとは思えない素晴らしいものばかり。これから少しずつご紹介していきます。(あ、そして、近日HP上でアップされる予定のカノエのギフトパックも!)

そんな訳で、ブログも時々英語併記します。もっとたくさんの人に、世界中の人々に素晴らしい日本の美を知ってもらいたい! 



I have bought a cooking knife, the blade was so long that it is a limit dangerous. So I was desperate for a box where I can store it safely. (before someone gets hurt.)

This long knife is meant to be used for cutting Japanese food called Iwaguni zushi 岩国寿司,”  which is a huge rice cake. (Match with the size of a wedding cake! LoL) Iwaguni It is regional food so you only see thme in Iwaguni,which is located in the southern part of Japan, Yamaguchi Prefecture.

I am not a sushi chef; I am a baker. So I use it for cutting a dough to make  croissants. What a sharpness! I better be careful not to cut down my all figures…

I myself surprised the Japan knives quality. In general, they cut veggies and meat so fine but cut comes without effort. I have used (and am still using) ZWILLING, for example but the delicate Japanese food can be done only by Japanese knives. Of course, it is inheriting the sward technique. (Yah, Samurai culture!)

I am happy to acquire a hand-made steel knife created from a skilled craft man. But really, the blade this long (20cm), shouldn’t it come with a case or cover ??


I proposed a craft man that I would pay for a case if it doesn’t come with it for free. Ant the guy answered that he doesn’t mean to be cheap. (I never said that !). It is just not available. Being as a steel craft man he can also do farm equipments, (hoe, sickle and scythe etc…) and those day-to-day tools have still the constant needs.  Whereas a sward smith, it is only for a sward but nothing else. Many retired without successors. (Until this point, I never really give a though who would be making a sward case. This is another sector of skill of artisan. )

So this is why I had to settle with a box in stead of a sward case. Lucky, there is a cabinet maker (yes, another craft man) near by my town. He used the leftover mahogany piece for my knife box ! 

But really, how could it possible to have such a hard time to find a sward smith in the country of Samurai... 

And this isn't it. Along with my business preparation, I discovered that other artist sectors, even in Kyoto, the situation is the same.  Less and less successors. I am worry that we soon will be on the verge of loosing them all. 

How I got to know Kyoto Artists is this. For my recently opened bakery shop, I wa
preparing for gift packaging. (EC Shop, mid-high price range. Rather than day to
day bread, mine is for special occasion so I needed something special to warp my 
high-end products. )

As I was looking for traditional taste with harmony of modern chic, I connected
with some of artists from Kyoto. We worked together and created an original
wrapping. This with a trigger of acquainted Kyoto top artists. I personally met
them and visited their atelier. They are about my generation and probably a
new generation for Kyoto artist. They are willing to try something new. And as
for me I could do something to introduce them to the border audience, outside
of Japan. You never know. How and when things start. What I know for sure now
is that Blogging about them and about their work has no limits nor boundary.



植物園 / Botanical Garden

秋の夕暮れ時。足利フラワーパークにお散歩に来ました。





どこを向いても絵になる植物園。最近のカメラの性能に助けられ、
立ち止まってばかりで、有酸素運動には全くなりませんでした。



A view from Botanical Garden in my neighborhood.  Wherever we see is pictorial thanks to the location, and to the modern technology. (Recently bought a new camera). I stopped almost every single step. No sweat, no exercise today.

今週また残暑がぶり返しました。今年の夏はひっぱりますね。。

夏休みのスナップショット ~牧場巡りと鍾乳洞~


今日の牛乳、当たりです。上澄みがクリームになるタイプの牛乳ですが、今日は中にもゴロっとクリームの塊がありました! くずまき牧場の低温殺菌牛乳。カノエのパン工房ではスコーンに使います。我が家で牛乳は“はれ”の日の食べ物扱いなので、“今日の夕食は特別に牛乳のポタージュ”、とか、“一日の終わりにご褒美のカフェオレ。” たまに飲むものなので、とびっきり美味しいのを! この牛乳にはいつも満足。何度飲んでも毎回 おいし~ ってため息がでます。

今年の夏休みは東北デビューしてきました。東北で涼む がテーマなので、鍾乳洞巡りが主なActivityですが、鍾乳洞って、岩手県に集中しているんですね。そして、牧場も、岩手県にいくつかあります。この、葛巻牧場もそうだし、小岩井牧場も有名ですね。うふっ♪
行ってきました。

小岩井牧場が一般に公開されていて、観光スポットとして運営をしているのに対し、葛巻牧場はひっそりとした牧場。ま、普通はそうなんでしょうね。事前に予約をとるシステムでもないようなので、とりあえず行ってみました。

でも、牧場に着いたのが日暮れ間近だったので、牛さんは牛舎の中。 あ~、やっぱり事前に電話すればよかったかね。。。せっかく来たのに。とぼそぼそ話していたら、『あら、何?』 て感じで覗いてる~。




「何かごよう?」
って感じで、出てきてくれて…


 そうこうしているうちに、もう一頭の牛さんも 興味を示して…




 
ついでに水を飲みに。
そしてアイコンタクト!
シャッターチャ~ンス!!

気持ちが通じた気がして嬉しかった はるばる会いに来たんだよぉ~。 ありがとね♪

牛さんに会う目的が運よく達成できたので、牧場内にあるレストランへ。 ここで晩ご飯の予定。




レストランのお勧めは、くずまき高原牛のステーキや、ハンバーグだそうです!
今日の夕食はお肉ガッツり系~。

のはずでしたが…。 ちょっとまって。。。

さっき牛さんたちと心が通ってしまったので、だめだ。

お腹はすいていたけど、チーズのピザで軽食をとる程度に。結局、宿泊施設まで空腹のまま帰路につき、2時間ドライブ。近くのイオンでお刺身を買って、やっと夕飯をとる事ができました。。。

でもね、こういう時は自分の気持ちに沿って行動した方がいいね。

高校生の時、生物授業で牛の眼球の解剖実験があって、あ、牛って生きものだったんだ、ってまじまじと実感して、そのあと、一年位ベジタリアンになった事があったけ。。。

今回は一週間ぐらい。でも、頂く時はいつも感謝の気持ちを持ち続けたいと思います。

 そして鍾乳洞。期待通り涼しかったです。

龍泉洞の地下水は、本当にエメラルドグリーンで神秘的でした。

ただ、今は閉鎖中だそうです。夏終盤の台風ラッシュの中、台風10号の影響で洞窟内の照明などがダメージを受けて、今のところ再開の目途が立っていないそうです。これもまた自然の力、、、なのですね。

今、また大型の台風16号が日本列島に接近中。
なるべく穏やかに過ぎ去ってくれますように。
